My Sicilian Sandwich

During a holiday when I passed a week without a toaster, I discovered pan fried rye bread, possibly the best accident ever!

Ingredients: Serves 1

  • 2 slices of rye bread
  • 1tsp of oil (olive or coconut)
  • Half a can of chickpeas, rinsed
  • 1/4 tsp dried oregano
  • Sprinkle of paprika
  • 1 tsp tomato purée
  • Zest and juice of half a lemon
  • Pinch of salt
  • Balsamic vinegar
  • 1/2 avocado, mashed

In a pan add a little oil, place the slices of rye bread in it and cook till golden brown.

Meanwhile, In a small pot, stir together the chickpeas with tomato purée, one teaspoon of water, the lemon zest and a pinch of salt.

Once the rye bread is cooked, remove from the pan and tip in the chickpea mix to let it cook for a couple of minutes.

Mash half an avocado on to the bottom slice of the rye bread and top with a sprinkle of paprika, spoon on the browned chickpeas, drizzle on the balsamic, a squeeze of lemon juice and a sprinkle of salt to complete the layers.

Finally place the other slice of the bread on the top and enjoy your sandwich!
